Nana’s Apple Pie


Oh yeah, this is the best!  Over 30 years in development, and it was worth the wait!  Thank you Nana!

 

1 recipe pastry for a 9 inch double crust pie.

 ½ cup margarine

2 T apple pie spice

4 T all-purpose flour

½ cup Honey

2 Granny Smith apples, peeled, cored and sliced

6 Jonathan apples, peeled, cored and sliced

 

Preheat oven to 425 degrees.  Melt the margarine in a saucepan.  Sitr in flour to form a paste.  Add 2 T apple pie spice and ½ cup honey.

 

Bake 15 minutes at the preheated oven temp of 425 degrees.  Reduce the temperature to 375 degrees F and bake for 50 minutes.  Turn off oven and leave pie in the oven for an additional 15 minutes.


If you think you have a better apple pie recipe, well then bring it on!

 

Harvest Pudding

 

This is a new favorite.  It warmed us up on a cold day in December when the snow was blowing sideways and everything was frozen solid.

 

½ cup cornmeal

¼ cup Honey

2 cup rice milk

1 cup solid pack canned pumpkin

2 T molasses

½ t cinnamon

¼ t ginger

1/3 t salt

 

Whisk all ingredients together in a saucepan.  Bring to slow simmer over medium heat & cook, stirring constantly until thickened, about 15 minutes.  Spoon into bowls and serve warm or chilled.


Served warm on a cold day it is sure to warm you up, the kids love it too! And it is healthy.  You may be able to make it gluten and lactose free. 

Apples and Sweet Potatoes

2 large sweet potatoes, peeled and diced
2 T Butter
2 T honey
1 t ground cinnamon
1/2 t ground allspice
1 Granny Smith apple, peeled, cored and sliced
1/8 cup milk

Place the Sweet potato in a medium saucepan and fill with enought water to cover the potatoes.  Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until tender.  Remove from heat, drain and set aside.

Melt butter over low heat in a small saucepan.  Mix in the honey, cinnamon and allspice.  Add the apple slices, cover, and let simmer for 5 minutes, or until the apples are tender.  Mix the apple mixture into the drained sweet potatoes along with the milk.  Mix well using an electric mixer or just a fork until the potatoes are mashed.

Apricot Oatmeal

A great winter breakfast on the farm!

3 ½ cups water

½ cup chopped dried apricot

1/3 cup Honey

½ t ground cinnamon

½ t salt

2 cups quick or old-fashioned oats, uncooked

 In a 3 quart saucepan, bring water, apricots, honey, cinnamon, and salt to a boil.  Stir in oats, return to a boil.  Reduce heat to medium cook about 1 minute for quick oats, or 5 minutes for old – fashioned oats or until most of the liquid is absorbed, stirring occasionally.  Let stand until desired consistency.  Serves 4.

Have some biscuits or toast with honey too!
